Country-style ribs don’t actually come from the rib area of a pig. Instead, they come from the shoulder area — specifically from the fatty, muscular section of the shoulder blade near the loin. This versatile cute is delicious on the grill, smoking, or  slow-cooking but can also be sliced thin and cooked in a stir-fry, or pan-braised and finished on a baking sheet in an oven. $7/lbs; Average weight 1.35 oz per package.
